Zucchini Bread (p. 97)

Sweet, warmed zucchini bread with a dollop of margarine is an irresistible treat.

Ingredients

  • 2 cups grated zucchini (about 6 medium-sized)
  • Egg replacer equivalent of 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 3 cups unbleached all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 2 teaspoons grated nutmeg
  • 1 teaspoon baking powder

Directions

Preheat the oven to 350 degrees. Lightly oil 2 bread pans.

Stir together the zucchini, egg replacer, oil, sugar, and vanilla. Add the dry ingredients and stir well. Pour the batter into the prepared 8 1/2 x 4 1/2-inch pans and bake for 50 to 60 minutes.

Makes 2 loaves

Preparation Time: 20 minutes
Baking Time: 50-60 minutes
